Bloody Mary Soup

Ingredients

2 oz. butter
1 qt. chopped yellow onion
1 pint minced celery
1 pint minced bell pepper
1 (16oz.) can whole tomatoes
2 (48oz.) can tomato juice
Grated zest (peelings) of 4 limes
¼ cup horseradish
¼ cup Crystal Worcestershire Sauce
2 limes, juiced and strained
¼ cup Crystal Hot Sauce
Salt and black pepper to taste

Directions

Melt butter in heavy stock pot and sauté the vegetables until the onions are very clear and the peppers are soft. Add the tomatoes, tomato juice, lime zest, Crystal Hot Sauce and horseradish and bring to boil. Reduce heat and simmer for 15 minutes. Puree this mixture in the pot with a hand blender, return to heat and simmer for 10 minutes. Add salt and black pepper to taste. Add the lime juice and Crystal Worcestershire Sauce and stir well to combine. Remove from heat and store in plastic containers. Thin with tomato juice or vegetable stock if needed. Serve hot, with a shot of vodka if desired. Serves 10 to 12.
